Sauvignon Blanc

To avoid oxidation and maintain quality, the grapes are harvested at night at low temperatures. The grapes are then pressed for a short time and the juice cleaned by decanting before entering a fermentation process of approximately 20 days. No oak is used in order to preserve the refreshing acidity of the wine.

Finally, the wine is aged for 3 months on fine lees to increase the complexity and smoothness of the wine on the palate. Pale yellow with greenish reflections and fresh aromas with citrus notes such as orange peel, orange blossom and some tropical hints such as passion fruit. On the palate it's delicate, balanced and very well textured; with pleasant acidity and a lingering finish.
